Florence has a wide variety of restaurants, though of course the majority features Italian, and often specifically Tuscan, specialties. There are a few general categories of restaurants in Florence, varying according to style, atmosphere and price. Trattorias and Osterias are the more casual establishments and often have a rustic or traditional feel. They are cheaper than restaurants, which generally offer a larger menu. The quality of food in Florence is very high, and is known to be some of the best in Italy. The eating times here tend to be earlier than in other Italian cities, such as Rome. Lunch typically begins at 1 pm and dinner around 8 pm. Most restaurants in Florence are quite small, so making a reservation is always a good idea.
 
 
The Italian Cuisine
Florence is the culinary capital of Tuscany, a region with its own unique twists to traditional Italian fare. The basics of Florentine cuisine are simple and centre around bread (plain with a crispy crust and airy inside), olive oil, choice meats and wine. A variety of local fresh vegetables are then added to almost every dish. Beans tend to figure prominently in Tuscan cuisine, used often in soups, stews and side dishes. When a dish has “Alla Toscana” in its name, it usually comes with beans. White beans are the most common, often prepared with sage and olive oil. Beef is much more popular in Florence and Tuscany than in the rest of Italy, and game meats such as boar, deer and rabbit are often featured. As in the rest of the country, seafood is an important staple, and usually exceptionally fresh and delicious. Tuscany is also famous for its wines, particularly Chianti, which originated here.
