In Italy everything seems to be about good food and indeed the choice of a good restaurant. As Milan is a trend hunting city you will find every kind of restaurant but lately a very good selection of Italian restaurants with excellent Milan cuisine. Over the last couple of years there have been two major changes in the restaurant scene. First, many hotel have established their own restaurants which serve great food and second, smoking has been banned from all bars and restaurants. Most of the restaurants also serve lunch between 1 and 3 pm but due to their business orientation Milanese people don’t spend so much time on lunch as Romans. Dinner usually starts around 8 pm. Many restaurants are closed during the weekend or on Sunday and Monday as most of the restaurants have adapted to business travellers and the fact the business is usually taking place during the week. All prices in restaurants are including a VAT of 10%. A tip of 15 % is usually added to the bill. The guest can then round up the bill as an additional tip of 5 – 10% is very common if the service was good.
 
 
Cuisine
Milan’s traditional cuisine is filled with simple dishes and has undergone a revival only a couple of years ago. As in fashion Milan goes with trends, so it is no surprise that at one moment Chinese is an in-cuisine and the next time Indian, then African, Japanese, Middle East or anything else. But since Milan’s cuisine was rediscovered, the cooking scene is concentrating on improving the taste of its own. After a long time of foreign cuisine, many restaurants, tarttorias and snack bars have opened and are very successful in offering high quality Milan food. Dishes that are typical for the area around Milan are “Nervetti” which is the hamstring of a calve’s hoof with thin slices of onion or “Risotto alla Milanese”. Also typical is “Cassoeula” which is a rich dish made from different “poor” parts of the pig such as pig’s trotter, ears, rips or paws and a variety of vegetables. Other typical food in Milan is “Kotelett alla Milanese”, “Vitello tonnato” (veal in tuna sauce) or “Panettone” (typical Christmas cake).

Food products from Milan are also very recommendable, for example salami from chopped pork and beef meat and of course all kind of cheeses. Well known are Mascarpone which is used for sweet dishes and crèmes or Gorgonzola which has an intensive taste. But of course there are many other Italian delicacies which can be purchased in Milan such as extra vergine olive oils, balsamico vinegars, tinned food marinated in oil or selected wines from different regions of Italy.
