Italian cuisine is well known around the world and Rome offers an overwhelming choice of pizzerias, restaurants and trattorias. Prices vary greatly, so no matter what budget you have; you will find a good place to eat. Just make sure to check the price list before ordering.
In today’s modern world there is increasing variety of the Roman dining scene. Except for the traditional pizzerias and trattorias it is common to find wine bars, salad bars, designer restaurants and deli diners.
Romans take food very seriously and many shops and businesses will close at midday for a long lunch break.
 
 
Rome Cuisine
   
Italian cuisine as we know it, is different in every region of Italy. In fact, every region has its own cuisine and dishes, and together they combine the whole Italian cuisine. Probably, the most important regions that contribute to the world known Italian cuisine are: Nepals (pizza, pastieria, sgoliatella etc.), Bologna (lasagne, tortellini, Parmesan cheese, ravioli etc.), Sicily (melanzane alla parmigiana, scacciate), Milan (risotto, panettone), Tuscany (bistecca alla Fiorentina, Saporelli and Panforte of Siena). A few traditional Roman dishes that are worth trying wile your visit to Rome:
Pasta alla carbonara – Pasta with a rich sauce made with bacon, eggs and pecorino cheese.
Pasta alla gricia – Pasta with Pecorino cheese, prosciutto and black pepper.
Saltimbocca alla Roman – veal cutlet with prosciuto, sage and Marsala wine.
Carciofi – fried artichokes pan cooked with oil and garlic.
 

The standard meal running order is: antipasto (hors-d’oeuvre), primo (usually pasta / cereal course, occasionally soup), secondo (meat or fish) with an optional contorno (vegetables or salad, served separately) and dolce (dessert) or frutta (fruit).
While top-range restaurants generally have adequate wine lists, "trattorie" and "osterie" generally have a limited selection, and you will see the same five - six brands mostly of white wine wherever you go. Most people ask for "vino locale", or "vino della casa" (the wine of the house), generally white wine.
