Valencia has a varied restaurant scene, with a wide selection of traditional regional restaurants as well as plenty of ethnic cuisine. Most of the Spanish restaurants in the city feature Valencian specialties such as paella, rabbit, and snails, while others are devoted to more general Spanish delicacies such as tapas. One thing that you can expect in any restaurant, whether Spanish, Chinese or French, is extremely fresh seafood. A growing trend in Valencia has been the establishment of fusion restaurants, many of which are quite fashionable and trendy. These restaurants often mix Asian cuisines with those of the French and Spanish, or Spanish and South American cusine, for example. They usually feature creative dishes with a distinctive flair.

| The Spanish Cuisine

The Valencian cuisine is an offshoot of Mediterranean cuisine, and is most well-known for its distinctive rice dishes, such as paella, its use of citrus fruits, and its wine. Though there are a variety of traditional Valencian dishes, some of which have been around since the 15th century, after the introduction of paella in the 19th century, the city is famous for little else cuisine-wise. Paella can be prepared in a variety of ways, and may be cooked with different combinations of chicken, pork, shellfish, eel, squid, beans, peas, artichokes, fresh peppers, and saffron. Valencian cuisine is also partial to seafood, and fish dishes are generally prepared in flavourful sauces, often containing garlic, olive oil and paprika. Eels, red mulet, and shellfish are among the most popular seafood of the region. Desserts in Valencia are important also, and traditional items include sugared chestnusts, egg rolls, Easter buns, and a wide variety of cookies and cakes.
